Vegan full grain lemon lavender cake

This is my new favorite cake, super delicous and it’s so easy to make.

As many have been asking for the recipe, here it is:

  • 300 g Full grain flour
  • 250 ml Soy milk
  • 180 g Sugar
  • 125 ml Sun flower oil
  • 1 pckg. Baking powder
  • 1 pckg. Vanilla sugar
  • 1 Pinch of salt
  • 1 Lemon
  • 3 Drops of eatable lavender oil

Topping

  • Lemon juice
  • 4 Big table spoons of powdered sugar

Grate the zest from half of the lemon, then add all ingredients to a bowl and mix them well until it’s all creamy. The dough will be quite liquid. Then add the dough to the cake pan.

Bake at 180 degrees for about 25 minutes. Test with a tiny stick and check whether dough will stick to it. If not – the cake is ready.

Let the cake cool. Then mix around 4 big table spoons of powdered sugar with around 3 tablespoons of lemon juice and top the cake with it.

I used dried eatable flowers, coconut flakes and lemon slices as decoration. But you can also use pistaccio pieces or dry lavender flower.
